New Surrey captain Smith could only watch as fellow South African Alviro Petersen batted for much of the day, amassing 167 runs including 19 fours and one six.
However, there was one Surrey star quick off the mark with Jade Dernbach (4-42) bowling England opener Nick Compton for 0.
After Dernbach had dismissed Jos Buttler and Peter Trego, Zander de Bruyn eventually had Petersen lbw in the 92nd over.Somerset skipper Marcus Trescothick on the toss and elected to bat.
But Dernbach bowled Compton in the sixth over for a duck and Trescothick (25) and James Hildreth (34) also followed for modest scores to leave Somerset 117-3.
Craig Kieswetter contributed 43 to a fourth-wicket partnership of 143 with Petersen to swing the momentum back in the visitors' favour, but five wickets, including that of Petersen, fell for 108 runs in the evening session, which Somerset finishing the day on 344-8.
